Rethymnians Mamoulis (Rethymniotika Mamoulia)



INGREDIENTS
Dough:
 -200 gr butter
-150 gr olive oil
-½ Cup sugar
-5 Cups flour
-½ Cup milk
-2 eggs
-1 Shot of raki
-½ Tsp baking soda
-2 Tsp tablespoons rosewater or citrus water   ( I prefer the latter )
-½ Cup caster sugar
 Filling:
-500 γρ walnuts & almonds roasted and chopped
-3  tablespoons sugar
-1  teaspoon cinnamon

DIRECTIONS

Melt the butter with the olive oil over medium heat, pour the sugar dissolved in milk and stir. Add flour and stir until tight dough. We leave to cool. Dissolve the baking soda in raki, beat the eggs, pour all the dough and knead again until smooth. Mix the filling ingredients. Cut a piece of dough (like walnuts) and push up to us to open. Put one teaspoon filling and closing well. The Mamoulis Bake in preheated oven at 180 ° C for half an hour. Sprinkle with rosewater and caster.

Rhodian wedding bread



It is a sweet bread that is made in Rhodes Island and is served at the wedding. 

INGREDIENTS

For the dough
-2 Kg flour
-2 Tsp. tablespoons fresh yeast
more-salt
warm-water (as needed)

For serving
- 200 g. fresh butter
- 1 cup honey
- Cinnamon powder

DIRECTIONS

Dissolve the yeast in lukewarm water with salt, add the flour and knead adding lukewarm water as needed. The more ferment, the better will be the bread. The dough is ready when it is smooth and tight. Preheat the oven to 170 ° C. Cut dough pieces, mold round breads in size small dish of tea and bake until golden. Remove the bread from the oven and, like hot, roll them in half, brush them with fresh butter and honey, sprinkle with cinnamon and slamming.

Meatballs, grandma's recipe, maybe real thirst crisp traditional meatballs !!! (keftethakia)


INGREDIENTS
500 gr ground beef
4 -5 slices stale white bread soaked and squeezed very well
1 egg
2 tablespoons mint
3 tbsp vinegar classic (from grapes)
2 onions, grated on coarse grater in place [grandmother the cut with a knife so I]
2 cloves garlic crushed
1 teaspoon oregano
1 teaspoon cumin
2  tbsp olive oil in the mixture
olive oil for frying pan
salt and pepper
If you want you'll add 1tbsp ouzo for extra flavour. Ouzo is a famous greek drink.

DIRECTIONS

Beat the eggs lightly in a large mixing bowl.
Remove and discard the crusts from the bread.
Soak bread in cold water and squeeze dry.
Crumble into eggs and add onion, vinegar, herbs  and seasonings (and ouzo).
Add the meat and blend lightly but thoroughly (I use my hands).
Refrigerate for 1 hour.
Wet your hands and shape into balls about the size of a walnut.
Roll in flour.
Shallow fry until nicely brown.
Lift out and drain.
Serve hot or cold as an appetizer.

Preserves small apples (greek apples-firikis)

The apple-Firiki said came from the Black Sea region. The Latin name is Pijrus malus or Malus communis and cultivated in Pelion since the 18th century. It has small size, cylindrical, greenish in color with red coating on the side facing the sun, high sugar content and special flavor. The Firiki improve alternate bearing, which gives harvest every other year. Tucked into fruition after the 8th year after planting, usually in the tenth year. Evolving into high growth tree. Ripen mid September.

INGREDIENTS

• 25  peeled apples-firikis (1100 g. Cleaned)
• 1 kg sugar
• 3 cups water
• 4 - 5 cloves
• 1 cinnamon wood
• 1 pinch salt
• 3 lemons (the juice)
• 10 - 15 almonds without peel



DIRECTIONS

Wash the firikis, put them in a bowl to fit and fill with water to cover them.
Remove the firikis into another bowl and pour into the bowl with water, the juice of two lemons (to prevent browning apples, when the peel).
We take one to one small apple and remove the special tool pits (or a sharp knife). Then the peel with the potato cleaning tool (or a sharp knife), taking care not to leave corners (especially if you use a knife) and pour it in the bowl with water and lemon. Rinse thoroughly apples, and throw them into the pot (no need to have a boil) and cover with a plate (to stay submerged).
Once it starts boiling, lower the heat in half and t boil for 10 minutes, (in the 5 'turn off the stove and let it continue cooking).
Allow the cake to stand covered with a dish for 20-24 hours.
Whiten and roasted almonds.
How whitewash and roast almonds: Although some prescription needed us blanched, or roasted almonds or hazelnuts, and we want to make ourselves, not to get them ready, follow the procedure below.
Easy, fast and much more affordable.
Put the almonds or hazelnuts in a pot or in a small saucepan with boiling water, making sure to cover them.

How roast almonds:

Berry sweet !! The most fast recipe !!!


INGREDIENTS

400 g. berries
300 g. sugar
 1 fl.tsagiou water
 juice of half a lemon

DIRECTIONS

Wash the berries and cut with scissors the stalks.
Meanwhile put in a saucepan with the sugar water to boil for 10 minutes and then add the berries.
Let stand 10 minutes to boil, and before remove from the heat and add the lemon juice. 
When completely cool down the store in vases.
